PNG Chimbu (Arusha and Typica Varietals): From the cool, misty mountains of PNG, these beans bring a bright, fruity acidity and a hint of wild, untamed flavours.

Brazil (Catuai Varietal): Brazil's famous terra rossa soil nurtures the Catuai beans, imparting them with a full body and notes of nuts and chocolate, grounding the blend with a touch of the exotic.

Colombia (Bourbon and Caturra Varietals): Colombian beans are known for their juicy sweetness and delicate floral notes. The Bourbon and Caturra from Colombia add layers of complexity and a subtle, winey acidity to the blend.

PROCESSING METHOD

Combining Traditions

In creating the Kalahari Bean, we honour the rich traditions of coffee processing from each region. The blend is a carefully crafted mix of fully washed and natural methods:

Fully Washed Process: This method, predominant in our Colombian and PNG beans, involves removing the cherry and mucilage from the bean before drying. It highlights the intrinsic brightness and acidity of the beans, bringing forward crisp, clean flavours.

Natural Process: Used primarily for our Brazilian beans, this method involves drying the beans while still encased in the cherry. This imparts a richer, more full-bodied sweetness to the coffee, adding depth and a luscious, creamy texture to the blend.

The combination of these two methods in the Kalahari Bean creates a coffee that is rich and smooth, yet vibrant and lively — a perfect balance that is as rare as it is delightful.

 

ESPRESSO PREPARATION

Grind: 22 grams of finely ground Kiko Bean espresso roast.

  1. Yield: Target a 44-gram yield for an ideal balance.
  2. Pour Time: 26-30 seconds extraction time.
  3. Temperature: 92 degrees Celsius for optimal extraction.
